However, there are still those who shy away from drinking their veggies. Well, today’s recipe might just change that. As the season of pumpkins progresses, we thought that a change of pace to either your regular smoothie routine was in order. For those a little reluctant to start a green regimen this may be just the “gateway” smoothie for you.
Simple Green Smoothies posted a pumpkin lover’s smoothie recipe on their site that is sure to become a fall favorite. Whether you are just in need of something to do with your extra pumpkin after carving, or you have cans of the stuff on your shelves just waiting for a new way to consume it, we’ve got you covered.
Pumpkin Spice Green Smoothie
2 cups spinach, fresh
2 cups almond milk, unsweetened
1 cup pumpkin, fresh (or canned)
1 large carrot
2 teaspoons pumpkin pie spice
Blend first two ingredients until smooth. Then add everything else and blend again. This makes about two servings. The colder your ingredients, the colder your smoothie. The Simple Green Smoothies blog recommends you freeze one of the fruit ingredients before blending to make it colder.
Also, to reduce the starchiness of the pumpkin, soak 1 cup raw pumpkin overnight in water and a tablespoon of lemon juice.
